Training & standards

  • Food safety & allergens: UK Food Safety L2 (L3 for leads), allergen matrix, temperature logs

  • Guest experience: menu knowledge, pace, recovery, and calm service etiquette

  • Craft: sushi rice, knife care, filleting basics, robata/grill foundations (by role)

  • Safety: H&S, incident reporting, manual handling

FAQs

Do I need sushi experience?
Not always. We hire for attitude and reliability. Trainee routes exist for the right people.

Can I choose my shifts?
We publish rotas in advance and try to accommodate availability. Weekends/evenings are core in hospitality.

Are trial shifts paid?
No — The trial shifts for eligible roles are not in line with policy.

Uniform?
Yes — simple, comfortable, and practical. We’ll brief you at onboarding.

Do you sponsor visas?
At present we prioritise candidates with existing right-to-work in the UK. If your situation differs, note it in your email.
