We use only fresh ingredients, with fish delivered daily from Billingsgate Market, London, ensuring the highest level of quality and freshness.

All our food is prepared in-house and never frozen. Our sauces, dressings, and desserts are made from scratch to maintain clean, balanced flavours.

We combine traditional cooking with modern techniques such as sous-vide and elements of molecular gastronomy, including spherification, to enhance flavour, presentation, and consistency.

Our goal is to offer exceptional quality and provide our guests with a truly enjoyable dining experience.
